Embers, not a cold grill. The meat cooks over heat, not on a plate, so the crust is dark and the inside stays juicy.

Our šašlykas is minced beef on a skewer, cooked until it crusts. The chicken cooks on the same heat. If you expect big chunks of meat, now you know.
